With pea season around the corner, this fresh and very simple pea soup is sure to impress! It is so simple and quick to make. The ripe avocado is the star here as it adds creaminess to an otherwise bland combination. Try it!
INGREDIENTS:
- 500g frozen peas
- 100g fresh peas (optional)
- 1 large white onion
- 1 ripe avocado
- Fresh mint
- Olive oil
- Sea salt and black pepper to taste
- ½ tsp organic turmeric powder
- Coat a large pan with a drizzle of olive oil.
- Add the onion roughly chopped and sauté on a medium heat until translucent.
- Add the frozen peas and enough hot water to cover the vegetables.
- Season with salt to taste. Cook for 5-6 minutes.
- Transfer to a high speed blender and add the avocado peeled and quartered,
turmeric powder, fresh mint leaves and a splash of olive oil. - Blend on a high speed
for 1 minute to obtain a silky smooth cream. - Serve hot or cold and season with black pepper. Add raw fresh peas for added
texture if desired.
*take care when blending the hot soup. Do not fill your blender to the top.
